    This review is for breakfast only, I never had the pleasure of dining here for lunch or dinner. I stayed at the Hyatt escala and ate breakfast here everyday before hitting the slopes. The breakfast buffet with create your own omelette is spectacular to get the day started. Our waitress was Rebecca everyday and she was friendly, upbeat, and attentive; she was always hustling and making sure our every need was met. The prices are reasonable mountain resort pricing, no more or less expensive than the other high end resorts in the area. I look forward to coming back next year.

    We expected much better quality food but it was quite average. We ordered the Mac and cheese and the roast. I took one bite and turned it back to the kitchen. There was no flavor and the Mac and cheese was smothered with oil and cheese. Not worth the high cost of the dishes. We were staying at the hyatt so this was convenient however just wasn't good. Service was great! The staff were very accommodating and pleasant. The Moscow mule drink was awesome! As for the food 2 stars and the service 4 stars...hence the 3 star review!

    Ingredients sourced locally and it shows!! UT trout was our favorite, followed by the mac-n-cheese, then the harvest vegetable pizza, and finally the home-made S'mores (you seriously can't miss this dessert!). Everything was artfully presented and simply delicious. Warm cozy atmosphere and excellent attentive service. Go soon - this place is going to be hard to get into once the word gets out.

    The best thing I can say about Escala was the atmosphere. The look and feel is current and cool. Thought the food was fine. Nothing really special though. Real problem was the service. We sat at 6:15 pm with only two other tables filled and service was surprisingly lackadaisical. As more, larger parties arrived, our party of 4 was ignored and then shuffled between 3 different people. Getting our check and food boxed up proved difficult and annoying. Won't go back next time in town.

    The ambiance is nice - think fireplaces and cool lighting, the service was attentive and the food was good not great - yet. BUT the potential is there. The menu is fairly small which I like and they use local when they can. There were 4 of us and we got 2 steak entrees, a pork chop entree and a wedge salad. We had the seared scallop app it was meh - if they aren't cooked perfectly they get rubbery. They were definitely fresh just overcooked. The 1st steak ordered medium rare was served more medium ( that annoys me) but had flavor - the caramelized onions were a nice addition as well as the smashed potatoes. The 2nd steak was cooked to order, cooked correctly and enjoyed. Hubby raved about his pork chop and after sampling it I have to agree - it was the best dish of the evening. The crisp wedge was standard and the house vinaigrette was a fan favorite. Dessert needs work... Creme brûlée - more vanilla and sugar required - it was rather bland tasting, the S'mores dessert is almost there but was inconsistent- the first one was packed with chocolate and graham but lacked marshmallow the second one a serious lack of chocolate - the horror. We also ate the breakfast buffet there. We showed up 20 mins before it ended and they welcomed us right in. Oatmeal, eggs, bacon, sausage, fresh fruit, waffles, pastry, cereal, muffins, juice, coffee, milk - all for around $18 before tip. service was attentive and they did not rush us. The chef made us fresh waffles and walked them out to us - much appreciated. The one thing I did not like decor wise would be the chair covers they were a silky kind of cover and showed stains and which made them look sloppy - definitely should change them out. I think with a bit more experience and working out some of the kinks it will be a great restaurant. The ingredients are there...

    The highlight of our meal here was the s'mores in a mason jar for dessert. Some kind of chocolate cake/brownie, marshmallow topping and graham cracker crumble was terrific. Our mains were fine. The buffalo burger had a good kick to it and was tasty Service was attentive and for a large hotel restaurant does a good job. Not a great apres ski spot unfortunately--more about dinner and no cocktail menu

    Great menu, but pricy..... I had the Provo trout with couscous! It was a nery nice birthday dinner. The s'more dessert was awesome! Excellent service and ambiance!

    They have a brand new menu that's definitely worth a try! The house Mac & Cheese, offered w/ herbed chicken, bacon & lamb shank or a few other options is second to none! The service was very attentive and the location can't be beat! Ski directly to the Lodge, leave your gear with the valet, have dinner, then let the valet drive you in the house Escalade down to your car. I couldn't have asked for a better end to an afternoon skiing. I'll certainly be back.

    According to the Manager the Escala Provisions Company Restaurant opened about a month ago. They still have some fine tuning to do, but overall we had a nice dining experience. The Gruyere Fondue appetizer was delicious. There were several other interesting appetizer choices that we would look forward to trying on another visit. For entrees we dined on the Pork Chop and the Salmon. Both were incredibly flavorful. The Pork Chop was a hair overdone for my taste but still tasted great.

    I went to Escala with not high expectations because of the other reviews on yelp. The customer service was excellent though the food was not appealing to eat. It visually was not appetizing when I received my food it was soaked in teriyaki sauce and the vegetable were more like scraps. I loved the salmon though enjoy my food because of the natural taste of the item not the sauces that cover the entree. I personally would not pay another 30 dollars for that plate if it was half the price I would consider going back. Might be a better bar restaurant then dinner venue.

    Stayed at the Hyatt Escala mid-August for an end of summer long weekend get-away. The last evening of our stay we decided to have dessert here...BIG MISTAKE!!! There were 9 adults & 3 small children (ages 3, 2 1/2 and 14 months). It was about 8pm on a Saturday night...the place wasn't very busy...maybe a total of 6 other people eating. We were greeted & seated by a very pleasant girl...who did not turn out to be our waiter...instead a guy came to our table...I'm really sorry I didn't remember his name, tall, shaved head...in his late twenties/early thirties...brought us all a tall very thin glass of water...came back about 10 minutes later & took our order (it appeared that just he & the girl that seated us were working the floor). We all ordered from their four item only dessert menu...which included a S'mores type dessert, an item they referred to as a cobbler, some other item that was some type of orange cake, and Hagen-Daz ice cream. You'd figure they couldn't go wrong with just four items for dessert, right?? WRONG!!! After ordering we waited approximately 30-40 minutes for our dessert to arrive. Keep in mind the restaurant was not full or busy. There is a bar inside too...about 3 people were now sitting at the bar. One of our party overheard one of the cooks saying they couldn't find any marshmallows...really?? When you offer as one of four choices a dessert that utilizes marshmallows as one of the main ingredients, don't you think you should have them in stock?? Not sure but wonder if they had to drive into town to buy some...when we FINALLY got our desserts...imagine our shock & horror at what we paid $7-8 a piece for (I realize EVERYTHING in Park City is overpriced!!) The S'Mores dessert arrived in a pint sized mason jar..a marshmallow smooshed on the bottom, next a layer of what appeared to be & taste like chocolate frosting, followed by a few graham cracker crumbs, followed by more of the chocolate frosting, topped with two marshmallows that had been torched by a kitchen torch...it was so thick & pasty we couldn't swallow once we took a bite. The "cobbler" (believe when I say I use that term extremely loosely...read on) was a pillsbury bisquit topped with some type of mixed berry JAM with one or two blueberries & one sliver of strawberry atop some whipped cream!!! REALLY??? It tasted like a bisquit with jam & berries with whipped cream...it was NOT a hand made bisquit!! It was terrible!! The ONLY decent thing was the ice cream...probably because they didn't have to make it!!! The only beef we had with that was that we ordered 2 kids ice creams & 3 adult. The kid sizes were $3 each & the adult size were $6.... However when they arrived...they were both the same size!!! One of our S'Mores desserts never arrived & after our waiter dropped off our dessert, he disappeared. He aptly left our checks at the same time he brought us our food. When we notified the girl waitress that we didn't receive one of our desserts & would like to speak to our waiter & have him adjust our check...she went to find him...we also went in search of him...watching the girl waitress explain to him as he stood at the bar talking to two girls. We stood there waiting for him but he never looked away from them or managed to come help us. We adjusted the bill ourselves & did not leave him a tip. We also reported the incident to the hotel. So our opinion...Don't waste your time, your money...and especially your calories. It's a beautifully decorated place but unfortunately it has YET to reach the potential other yelpters have felt it could ever have. It's really just a showplace for the hotel...not a REAL functioning restaurant that deserves to be taken seriously.

    I would like to first say that I am apologetic for not saying anything about the food at the restaurant, but I just couldn't get myself to do it because the service was very good. The three stars are because I had breakfast the morning after dinner, and the same good service, with better food increased the rating from 2-3 starts. Although both times I have dined here, the restaurant has been very empty and I would be interested to see how the level of service changes with being busier. Being a chef myself, and a business owner, I do understand that everyone has bad nights, and if I get the opportunity to do dinner again here, I hope the quality and execution is better. I tried the scallop dish, and the flavors were good, not memorable, but the issue I had was with the cook on the scallops. The sear was not nearly what it should be, and the scallop was a bit rubbery and not fork tender (as it really should be if prepared properly). But my biggest issues came with the entree. I had the Braised Pork w/risotto and kale. The Kale was the best part, and even this was not special. I would have preferred to see the Kale roasted, with a bit of crunch to it. The risotto was very undercooked. It had a very nice crunch to it (not a good thing), and if I weren't so hungry (and hated wasting food), I would have probably stopped eating after 1 bite. But the worst part of the meal was the braised pork. The pork was bland, tough, and extremely dry. A fellow diner in my party had the same exact dish and somehow her risotto was cooked to almost being done and her pork, yet still bland, was slightly more tender and not quite as dry. Nevertheless, the dish was an extreme failure, and although I know I am very difficult to please in a dining setting, I still believe that if you are charging $30 a plate for a dish that cost at most $7 to actually make, you better make sure the risotto is cooked properly and that the braised pork is actually fork tender and not incredibly dry. The execution was so far away from being right that I had to write a review. Again, the service was great. The setting is relaxing, but the consistency might be an issue, which is always the most difficult aspect in a restaurant. I'll give the Escala Provisions another shot, and I am just hoping the execution is better.

    Short and not so sweet - restaurant had approximately 5 tables of guests and after ordering 2 pizzas & 1 beer, we sat for 25 minutes before I got the beer (having asked where it was). I noticed that only one table had received their food (table of two. The waitresses told us they had been "slammed" - 5 tables - slammed?!! After another 15 minutes the chef came out and apologized to another table and to us. At that point we were for food not apologies! When the 2 pizzas arrived, they were COLD! Not hot, not warm, COLD! Where was the Chet's apology now? We were offered free desserts - nice gesture, but we weren't there for dessert! We usually shy away from hotel restaurants, but since previous reviews had been good, we decided to try EPC. Hopefullu my review will keep the next diner searching for another place to dine!
